Watching God Supply Our Needs

The other day when I was complaining about having to cook all the time, I asked God to change my heart. Anytime my heart isn’t in the right place and I’m making myself miserable over stupid stuff, I just ask God to turn me around and show me what I’m missing. He always does. And it turns out I get in my own way a lot of the time. I think we all do to one degree or another.

The last few days, I’ve really enjoyed the heck out of cooking. And I have been diving into the pantry and the freezer. Yesterday morning we had breakfast sandwiches with those bulk sausage patties I made on Sunday topped with an egg and cheese. SOOOOOO good! Midday we had a snack of tea and cookies. Then last night I baked pork chops and served them with steamed veggies and brown rice. I did kinda tip the calorie scales with some yummy country gravy on top but I didn’t make it with cream like I usually do.

This morning I’ll crumble up some of those sausage patties and put them in the gravy and heat it up while I make homemade biscuits. That’s always a delightful taste treat. When Mr. FixIt was heading up to the WVU game on Saturday, he texted me and asked me to send his son my biscuit recipe. Now that I think about it, I sure hope he said something to him beforehand and he doesn’t think we were trying to tell him something. His son made biscuits and sausage gravy for breakfast that day but he used canned biscuits. He tried to make homemade a couple of times but he said they didn’t come out very well. I never made a biscuit that was fit to eat till I learn from Tipper at The Blind Pig and the Acorn. Now I won’t make them any other way. (Sorry, Ms. Brenda!)

So, it’s becoming more noticeable that the days are getting longer now. Every day will bring us closer to spring. I have so much to get done before mowing season so I need to focus, focus, focus. Mr. FixIt has an appointment tomorrow so I’ll stay home and get some more work done. I’ve found the basement to be a bit too chilly to work in when the temperature goes down in the 30’s…no matter HOW much heat I put on down there. I tried to work on my old desktop that’s in the desk in the living room, but it’s so old it won’t connect to the wifi router. And I need the internet for this project. We don’t have any heat turned on in the office so I can’t work on that computer comfortably either. I ended up working in the Big Red Chair in the living room while Mr. FixIt watches TV. I use my noise cancelling headphones to play white noise that drowns out the TV completely.

The Green Comet might be visible to us tomorrow night just in time for Mr. FixIt’s birthday! Now, I HAVE to buy some stuff for that special dinner. Mr. FixIt has requested scallops and a petite steak with fries and a veggie and I’ll make him a cake or pie for dessert. Last year I absolutely ruined his scallops by forgetting he wants butter and garlic ONLY! This year I actually wrote that down on the shopping list so I won’t forget. lol I might make that tonight but more likely on Wednesday to celebrate on the actual day. I can’t believe how fast January flew by. Tomorrow is February already!!!
