What a Week

We couldn’t tell which way to turn on Tuesday. It started out with this great breakfast…French toast, turkey sausage, and a sliced fresh peach. It was divine and pretty lo-cal considering. Then I had a hankering for spaghetti last night so I trimmed down my usual recipe to make a passable meal.

Other than a little cooking and cleaning and a quick trip over the hill to the Post Office, we didn’t do much. I worked on the computer in my Big Red Chair and watched Andy Griffith reruns. Mr. FixIt made some phone calls and stretched out in HIS Big Red Chair. Then we watched the news.

Sigh.

I don’t care what side of this whole debacle you land on. I’m staying neutral in here and hoping to keep it a politics free zone for the coming year and a half. Am I looking forward to another contentious election season? Heck no! But I’m going to keep it out of here because we all need a safe place to land…especially those who are grieving. Am I sticking my head in the sand? Absolutely not! But in here, talking politics is like talking about hemorrhoids at a dinner party. We may skirt around it a little, but we aren’t going to show it to anyone. Deal?

That being said, I will say this. No matter where you stand on the political spectrum, yesterday was a sad day for the state of our country and I’ll continually pray we get this right…not only for us, but for our great-great-grandchildren. Amen.

Now, back to yummy stuff.

Here’s the recipe for the French Toast:

Ginny’s French Toast

3 eggs, beaten
2 heaping teaspoons Truvia Brown Sugar
1/2 cup unsweetened Almond Milk
1/2 teaspoon Cinnamon
1 teaspoon Vanilla
Dash of salt
4 Slices of 35 calorie per slice bread. I used Heiner’s Whole Wheat.

Heat a skillet to medium high heat. Spray with either non-stick spray or olive oil spray.

Whisk the ingredients together and dip each bread slice into the batter, coating each side. Fry till golden brown and serve with Sugar Free Syrup.

Makes four slices. Two slices equal 186 calories! I love sausage, so I’ve started buying Jimmy Dean Pre-Cooked Turkey Sausage Patties. Two patties is only 120 calories. I also had a fresh, juicy peach that added 104 calories. So…for a breakfast fit for a Queen, it was only 410 calories. Compared to my usual French toast that is packed with cream, real brown sugar, and butter…this is something I can have, totally guilt free. I do limit it to once a week or so.

And here’s the recipe for the Spaghetti:

Ginny’s Spaghetti

Ok, this is no big secret. I buy a jar of sauce that has no more than 50 calories per serving. I also buy Jimmy Dean Turkey Sausage Crumbles. They’re precooked. I put in about a half a bag which is 300 calories. The full jar of sauce is 250 calories plus the 300 in the Turkey Crumbles so there’s 550 for five servings. That’s 110 calories per serving. I use Barilla Protein+ Spaghetti which is 190 calories for 2 ounces. My spaghetti dinner was only 300 calories. MUCH less than the calorie fest I used to cook. I used to eat twice that amount of pasta and used fat packed Italian sausage. I made the breakfast sausage taste more like Italian by adding a healthy dose of oregano, garlic, and crushed red pepper flakes. And, I skipped the two slices of Texas Toast Cheesy Garlic Bread that we normally had.

So, there’s a couple of recipes to add to your repertoire and cut some calories out of your daily budget. We head to town for an appointment today then a pretty lay low weekend ahead. Just what the doctor ordered! Whenever I feel overwhelmed these days with too much to do, I just remember that God made all the stars and knows them by name. I can get my paltry little first world problems taken care of. They’ll be done when they’re done.

I Love Fall Camping! It’s my favorite season to get out in nature and grab the last of the nights under the stars, talk quietly outside the camper in our comfy chairs, a warm sweater wrapped around me to ward off the chill, and a steaming mug of tea. The air smells of woodsmoke and leather and damp leaves. It’s a magical time to be out in the woods!
