Treasures from the Past

When I was looking through a box the other day, I came across this gem. The Glenwood Post did a full page feature on my pie baking prowess as an incentive to get people to sign up for one of my classes. Valley View Hospital Auxiliary holds “Pie Days” during the annual Strawberry Days festival over Father’s Day weekend. Participation had lagged a bit, so they asked if I would hold a class after hours in the hospital kitchen.

I was thrilled to do so, but I neglected to do a trial run first so I could get to know the oven. I had no idea all of the ovens were convection, which makes sense when you are cooking high volume on a time crunch. Great for multiple large pans of lasagna. Not so great for a delicate pie crust. If you look closely at the bottom left photo, you’ll see the edges are pretty toasty. But we muddled through it. I think that was a coconut cream pie, but I wouldn’t swear to it. That was a long, long time ago.

I’ve often thought of entering something in the local County Fair, but it’s always the first week of August and that’s right when we return from Colorado. I’ll put it on my calendar next year to try to schedule the Colorado trip a little earlier. It’s been a long time since I entered things in a fair. I can remember hauling stuff out there and sitting all day in the heat as we watched the judging. At that time, all I entered were preserved jars of food and baked goods. I wasn’t a very accomplished knitter at that time. It would be fun to enter some things. Not that I don’t have enough things on my plate, right? lol

Knitting group was fun as usual. I cross-stitched on the sampler and knitted a little. I took my knitting in to town with me to work on the socks while I was waiting for the dermatologist to see me. I had melanoma in 2005 so I get checked every year. She was pleased nothing was abnormal and thrilled with my healthy lifestyle changes. She had a 4th year medical student shadowing her this time. I never mind having a student, intern, or resident tag along in my exams. They have to learn somewhere and I enjoy talking with them.

When I was done, Mr. FixIt was just about finished with his appointment. We met at my favorite Mexican restaurant. I was craving chips and salsa. I don’t like to buy them and have them sitting around the house. It reduces the temptation. The menu was massive and I had to read for quite a while before I settled on something I could eat. I selected fish tacos with a red cabbage jalapeño slaw and a spicy creamy sauce to dip them in. Much less calories than say, chimichangas or burritos. 

My weight loss journey is more about making selections that have less caloric density. Selecting the fish tacos with the cabbage on them makes a lot more sense than the ground beef variety loaded with cheese, sour cream, beans and guacamole. That way, I can eat out and really enjoy the meal without paying for it on the scale later. 

It was really hot yesterday. It was in the 80’s. A few scattered showers rolled through, but not enough to cause any problems. I exchanged the capris I bought at Sam’s Club for a smaller size before my appointment. Yay, me! I went to the restaurant and met Mr. FixIt, then he headed right home from the restaurant to dig out the ditch by the creek. I wandered around Kohl’s for a little bit then headed home myself.

Today is a trip to town to get the oil changed on my truck and rotate the tires. I need to find a place to get the transmission flushed, too. I’d also like to look at a couple of tires for the camper before we leave for the beach next week. The nice thing about these tires is, they’re pretty small and don’t cost an arm and a leg. Not like the truck tires. Wowza…they’re spendy!
