Road Trip Prep

Once you’ve got the first camping trip of the season under your belt, the others take less time to prepare So many of the camping items get put away for the winter and inevitably, you can’t find something you really need. We are trying to keep all the camping supplies in one place, but until that big pole building gets sorted out, things are still scattered around.

Mr. FixIt and I went to town yesterday to get gas in the truck and go to our favorite grocery store. I haven’t really camped while eating clean and green so it’s a bit of a challenge to figure out what to take. We don’t have a huge refrigerator in the camper so we can’t really load up on too much fresh food. We’ll be camping somewhere fairly remote, however there is a very small grocery store and restaurant nearby. We’ll be visiting family on Sunday and again on Monday night so breakfasts, snacks and one dinner are all we really need to plan for.

My sister/friend Sue is on a lifestyle change, too. She gave me some suggestions for low and no calorie foods and salad dressings so I picked some up yesterday. We have apples, bananas, and blueberries. Sweet Potatoes and Russet Potatoes. We’ll pick up a rotisserie chicken and some lettuce at the last big grocery store we pass before the campground. I’m sure we’re going to have plenty to eat.

It will seem strange to not have hotdogs and burgers and s’mores. I haven’t had any real cravings on this program, but I do occasionally like a crunchy, sweet treat. I bought some Purely Elizabeth Ancient Grain Granola to sprinkle on top of my Oikos Triple Zero Yogurt. Add some fruit and it should satisfy any sweet tooth. I ate like crazy yesterday and I still had some calories to spend at bedtime so I added a banana.

I do want to tell you about this amazing egg scramble I made yesterday. I had leftover fluffy quinoa from supper the night before. I have a mister that I spray vegetable oil on my pans instead of non-stick cooking spray. You hardly get any calories and you aren’t eating heaven knows what in your food. I tossed the quinoa in the skillet with a scant 1/4 cup of cubed ham till it was warm and removed from the heat. I scrambled two eggs and added about two teaspoons of sour cream, two tablespoons of cottage cheese, and a half teaspoon of “All Things Eggs”…an herb blend I purchased at William Sonoma last summer. A little pricey, but it lasts forever and is oh so yummy! I put the skillet back on the heat and poured in the egg mixture. Stir and fold till the egg is set and you have a delicious meal packed with protein and very little fat. 

We had Wendy’s salads for supper after grocery shopping. We parked at a park on a bluff overlooking the Ohio River and ate then walked the path all the way around the park to get our steps in. It was a stellar evening. It was still in the 80’s and the sky was partly cloudy. The river was a smooth as glass. A beautiful day all the way around. Today, we finish some laundry and pack then off we go bright and early tomorrow.

Even though I sleep in the camper a lot…because I can…this is our first official camping trip of the season and I can’t wait to spend some quality time in the woods with my sweetheart! I doubt seriously if there will be cell service there so my posts may be spotty at best. But I’ll at least try to get some photos out to you if I’m near service.
