The beach
“Is there anything better than spending time with loved ones?”

This has been the BEST week! The weather has been amazing. The company SO much fun. And the food has been divine. The only thing that could have made it better would be if ALL the family could be here.

We started out with a hearty breakfast. I had a box of matzoh leftover from the Seder demonstration at church group the other night and brought it along. My very favorite Passover breakfast is Matzoh Brei. You take the sheets of matzoh and crumble them up. Pour enough hot water over them to cover them and let them sit for a while. Then you squeeze the water out of them and place the wet matzoh in another bowl. Beat three or four eggs with some cinnamon, a dash of salt, and a little vanilla extract together then pour it over the wet matzoh and stir till you get a thick batter. Drop 3/4 of a cup of the thick batter on a hot oiled griddle and cook till browned and set in the middle. Serve with butter and syrup like pancakes. Yummm!

We all gathered our things and headed to the beach. Sue and I walked for a while and the guys fished. Mr. FixIt let me cast for him once. We got out the umbrellas and sat for a long time watching a school of dolphins playing in the surf not too far from the shore. Just when we thought it couldn’t get any cooler, we saw the blowing mist from a small humpback whale that  breached and showed his beautiful tail fin as he dove back into the sea. OMGosh! That was SO exciting. The guys never got a nibble while we were there so Sue and I decided to head to the indoor pool and exercise. We did some stretches and water aerobics moves till we were tuckered out and headed for the condo.

After our showers, the boys come in with stories and pictures of all the fish they caught AFTER we left! Skates, shark, drum, croaker…they were busy but as always, practiced catch and release. It is the sport that is fun…not the killing.

Once we were all cleaned up, Mr. FixIt hunted up a restaurant that served scallops as that is Ben’s all-time favorite. We discovered Henry’s in Kill Devil Hills and it did not disappoint! I had the best coconut shrimp. Sue had a blackened tuna steak and the boys both had scallops. The hush puppies were really good. We were all too stuffed to order a rich dessert. We stopped at the Ben Franklin store for souvenirs for the grandchildren and Walmart for milk and we were done for the day!

As Sue and I were splashing around in the pool in the afternoon, I shared a concern that’s been bugging me just a little. My younger daughter is getting married in August and I am heavier than I wanted to be. I still have some time to lose weight, but that’s not the point. I’m self-conscious because my ex-husband will see me as fat. It’s ridiculous that I should even let that thought in, but there it sits. Sue has known me through thick and thin since my older daughter started dating her older son. We talked about it as we bounced around in the water with our ample sixty-something tummies and laughed at how silly we can still be, even when we KNOW it doesn’t mean diddly squat what others (ESPECIALLY ex-husbands) think! We talked about dressing strategies and letting go of the rest.

This has been an excellent week for me…just what I needed. A week of fun and sun, sand and surf, and lots of love. My best champions are with me this week and I feel surrounded by their love and care. As Ben & Sue head off to the airport tomorrow, Mr. FixIt and I will drive home to the Ponderosa for a few days of mowing before we pack up the new camper and head out on her maiden voyage to Indiana!

My heart is so full!
