Day 164: Step One…Pick Tomatoes

Earlier in the season, I wasn’t at all sure I would get many tomatoes. Blossom end rot was decimating my crop, but I changed the feed and…wham! They are coming on like gangbusters now. I had another bucket ready yesterday morning and…they don’t know a day off from nothin’! 

I went out and got the crocks of bread dough from the garage fridge first thing so I could bake in the cool of the day. When you bake sourdough bread in a dutch oven inside your kitchen oven, you have to heat it up to 500 degrees. It doesn’t take long till your house is overheated…even at 9:00am. I have a window fan so I put it in the kitchen window and exhausted as much of the heat out as I could before the outside temp climbed.

I am thrilled with the success I’ve been getting with my sourdough bread. I have read that the longer you bake sourdough, the more wild yeasts grow in your environment, and the tastier your bread becomes. I’ve been getting a really nice “oven spring”, as well. That’s the amount of rise you get in your bread in the oven before the crust gets too hard to expand. The cuts I make on the surface helps that as well as the way I form the dough before I set it in the fridge to raise slowly overnight. One of the loaves was at least 5” high before I cut it in half. The cutting kinda smashed it down a little.

As soon as the bread was done, I considered just stopping for the day, then I checked my tomatoes and I cannot stand to lose even one. So, I scalded them in boiling water, dropped them in ice water, slipped the skins off and cut the core out. Then I gave them a quick flip of my wrist to extract the seeds and dropped the pulpy tomatoes into my cooking pot. When I was finished cleaning the tomatoes, I strained the seeds from the juice in the bottom of the bowl and added it to the pot. I set it on a low flame and when the juices started to simmer, I used my immersion blender to chop up the tomatoes but stopped short of actually puréeing them. I let the sauce simmer all day, seasoning it here and there to my tastes.

Later in the afternoon, we made a quick trip to town for meat and mushrooms for the sauce and finally sat down for a feast at 6:30! I didn’t actually get my day off. But, Mr. FixIt mowed because I was busy inside, so I didn’t have to do that. Maybe today will be my real day off! lol
