Cold and Rainy Days Call for Comfort Food!

There’s something so cozy about a chilly, rainy day in West Virginia. The clouds are  grey and heavy with rain. Periodic downpours plink-plink-plink on the exhaust pipes stick out of the roof. I spent the morning on the computer in the office. I didn’t accomplish much other than cleaning and organizing so I can work more easily. I brought some more things in from the camper…my knitting, primarily. But I didn’t take the time to work on it. I will soon.

After tossing the chunks of pork in the dry rub to coat evenly, the initial sear creates a crust on the meat that keeps the flavor sealed in!

When Mr. FixIt went to town on Thursday, I asked him to get me a good sized Boston Butt roast. We both love roast pork. Sometimes I just make it fairly unseasoned so I can serve it in several different ways. But when I’m feeling all bougie-like, I make Dutch Oven Pulled Pork from Our Salty Kitchen.  Honestly, it’s the best pulled pork I’ve ever made and is a reliable recipe, time after time. We had pulled pork sandwiches last night for supper. SO delicious!

You only add one half cup of water to the Dutch oven and the meat braises in it’s own juices, rendering down into its own “barbecue sauce.”

Another taste treat I pull out of the cupboard on cold days is my faithful tin of Blue Lotus Chai. It is a traditional Masala Chai. It’s something to be savored. I love it, but I’ve had this same tin for ages. I divvy it out like gold. I was really feeling it yesterday because I had THREE cups! I’ll probably be buzzing all night! I usually add a decaf teabag to the cup for a little richer flavor. Sweeten how you like. And I used about a quarter cup of Silk Original Almond Milk. I worked at the desk, sipping my chai, and listening to the rain out the window. What an incredibly relaxing afternoon!

Masala Chai…it comes with its own tiny wooden spoon for measuring out about a quarter teaspoon per cup.

This is such a treat…slowing down and nesting after being on the go since…well, all year, really. Mr. FixIt went to town yesterday to get a part for the furnace and, unfortunately, that didn’t fix the problem. It’s supposed to be pretty chilly this weekend and we’ll probably be doing without the furnace, but I have all the trust in the world in my husband’s abilities. He can fix anything!

Mmmmmm….leftovers!

Today will probably be spent much the same way. I do need to do some designs for the shop and get back in the swing with that. I kind of slacked off during our trip. I’m sure the rain and wind will bring down much of the beautiful color we saw earlier in the week. The woods look so lonely and bare when they’ve been stripped of their foliage. That’s when the long, dark nights of winter become a little harder to take. I’m vowing to keep myself active and occupied all winter so I don’t get the “grey gloomies” like I usually do!
