What a Beautiful Day!

Little Christmas Stockings

I woke up before the alarm went off. I’m so glad, because I hate an alarm clock. They always wake me with a jar and it doesn’t set the mood for a fun day. I headed out for town and got to the coffee shop in plenty of time to get the tables ready for our gathering of the ‘71 Coffee Divas.

It is so much fun to get together with women I graduated from high school with. It’s been a while since we gathered because I was so busy this summer. And, since I’m the one with the invite book, we had to wait till things settled down a little bit. You wouldn’t think the week before Christmas would be a great time to to meet, but we still managed to get ten gals together. And one was a surprise as she was in town for the holidays!

When we went our separate ways, I stopped at Kohl’s to return one of the nightgowns I got for Christmas. It was a little too snug and I need roomy! I wandered around the store for quite some time. I picked up a couple of things. One was a basting brush made out of that rubbery material…silicone, I think. Mine kicked the bucket over Thanksgiving. I love those things. They are soft and flexible enough to baste delicate pastry and strong enough baste a turkey right in the oven.

I soon headed home and started helping Mr. FixIt. He wanted to make another batch of Peanut Butter Blossoms for bowling tonight and I left the kitchen a mess Friday night. I worked on the kitchen and later vacuumed the house. Then it was time to cook supper. I asked Mr. FixIt to bring a chuck roast home the other day and instead, he brought two beautiful London Broils…priced 2 for 1. I put them in marinade and popped them in the fridge Friday night. I set them out on the kitchen counter for an hour to warm up to room temperature.

After the grill was heated to around 700°, I threw the two huge steaks on and ran inside. I popped a big potato in the microwave and got the asparagus out. I ran back out, turned the steaks and topped with two pats of butter, and ran back in. I took the potato out of the microwave and set the plate of asparagus with plastic wrap over it into the microwave for two minutes. I ran back outside and turned the steaks back over putting two pats of butter on that side. 

After another three minutes or so, I carried the steaks back in and let them rest on the cutting board for a little bit. Then I sliced them on an angle, plated them along with half a buttered potato and a few stalks of asparagus and called Mr. FixIt to the table. Neither one of us had ever had London Broil so we really didn’t know what to expect. It’s a good thing it was pretty rare because it was kinda tough, in spite of being marinated. It was quite flavorful, though.

After supper, I sliced the remainder of the meat and got four more meals. Five dinners for $20 is NOT bad! I put the bags in the freezer and we’ll pull them out when we want a quick dinner. We can cut them up in strips for fajitas or steak salads. We could dice them in really small pieces and season them well to top nachos. Any number of uses without cooking…my kind of dinner.

When those dishes were finished, I settled in the big, comfy red chair and finished knitting the second Christmas stocking for the little boys. Today, I have absolutely NO reason to go anywhere so I am staying home…I promise! I might bake an apple pie. Mr. FixIt is a substitute on the bowling league so he’ll be heading to town before too late and I’ll have the house to myself for a few hours. I think I’ll put on a Christmas movie and start knitting the next Christmas stocking!
