Vacations are Exhausting!

I made Sourdough French Toast for breakfast yesterday and had enough left over for the next couple of mornings at least. It’s great when you can cook ahead, especially in the summer when cooking can heat the house up. Those summer kitchens they had in the old days would really come in handy. The guys grilled last night. We had chicken tenders and corn-on-the-cob and bless their little hearts…they grilled that corn till it was mostly black and dehydrated. I thanked them for cooking, but told them they could never touch my corn again! lol

Today is Daughter #1’s 49th birthday! We are grilling again tonight, but my son-in-law will be in charge of the grill. He’s really good at it. His 49th birthday is Thursday and their 28th wedding anniversary is Saturday. So, we’ll just celebrate the whole shebang tomorrow night. I’m baking her favorite lemon cake with lemon curd filling, and lemon frosting garnished with red raspberries. We’ll also bake Grandma Lois’ Chocolate Cake for my son-in-law. Then everyone will be happy!

Mr. FixIt and I went out and ran errands yesterday and went to Noodles & Company for lunch. I had this wonderful dish….Zucchini and Roasted Garlic Cream. The zucchini has been spiral cut like noodles and lightly steamed. I had the small size. It was delicious and only 340 calories. That’s not bad for a meal out.

We went out to check the camper and it was fine. We are so grateful we haven’t had hail while it’s out in the wide open. The guys are going to take the camper out to eastern Colorado tomorrow and I think they are looking for a place to store it either inside or under the cover of protective trees. I don’t want our trip to be over, but I’ll be so grateful when we get this thing safely home. I don’t think we’ll bring it cross country during tornado and hail season again. It’s just too risky. A camper is a big investment and even though we have adequate insurance, there’s no need to create undue risk. 

Curly Dock and Bind Weed…two invasive and noxious plants that are everywhere in Colorado. Once these weeds get established, it’s nearly impossible to eradicate them.

So, that’s all we are doing at this point. We’re having a blast!
