Twelve Long Hours

Mr. FixIt’s bed is finished. We just need to put the plywood on top. The pretty facia will have to wait till we get home from the beach. I think we have a lot more usable storage now.

Yesterday was a long day and I got a lot done. I got up super early and went to Lowe’s for MORE wood! Do you know they open at 6:00? Who knew? Well, we are going to have beds to sleep on, but the fun and fru-fru stuff won’t be finished before we go to the beach. But that’s ok. We’ll work on it when we get back and by the time we go to Colorado, it will be a show piece! But, I’m telling you…I’m whupped! I told Mr. FixIt I can’t wait to get to the beach and relax. He’s as ready as I am.

I took a break around 4:30 and started supper. I bought a package of lamb chops at Aldi the other day. I usually get them at Sam’s, but these were MUCH better. So tender and flavorful. I forgot to set them in marinade so I wanted to use some really flavorful seasonings. I picked up some of Tabitha Brown’s Very Good Garlic Seasoning at the store a couple of weeks ago. Put some in a gallon plastic bag along with a little extra garlic. Zip it closed and shake to coat. Fry the in a skillet and when they are still slightly pink, remove them from the heat, squeeze some honey over each chop and a generous squeeze of an orange, and let rest while you prepare the sides. I put some quarter gold baby potatoes in the air-fryer when I started the lamb. 

I was gifted some fresh asparagus yesterday by my sweet friends at knitting group. (I went for an hour till the frost was off the grass.) I love asparagus! I always put it on a plate and squeeze fresh lemon juice on it. Cover it with plastic wrap and microwave it for one minute, test to see if it’s done. If not, nuke it another minute. That just about does it for my liking. I like them to still snap when I bite into them. By this time, the lamb has rested for about 20 minutes. I just pop the chops in the skillet real quick to warm them up and it’s time to plate your food! I need to do a few more things today to the camper, then I’ll throw some things together for the trip and we’ll pack up the truck bright and early in the morning. Ummmmm….do you remember last week when I said I was going to be SUPER organized this trip? Yeah…God just laughs and laughs!
