Smack My Head…I Forgot the Beans!

I added about half a teaspoon of baking powder to the self-rising flour this time and I love how high these biscuits rose…and so light and fluffy!

Ever have one of those moments where you just KNOW there’s something you’re forgetting to do? Well, when I woke up yesterday morning at 6:00 (why that early, I have NO idea), I checked to make sure my post actually…you know, posted. It did. And you wonderful people started talking about how good those soup beans and ham hocks and iron skillet cornbread sounded, I was like… “Dang! I knew there was something I was supposed to do before I went to bed!”

I forgot to put the beans on to soak. I know there are shortcuts like bring them to a boil then cover and remove from the heat. Or cook them in a pressure cooker. But they never quite taste great unless I cook them the way I always do…in a slow cooker seasoned with a couple smoked ham hocks and chopped up onions and a generous grind of fresh black pepper. I’ll try again today!

Since I woke up so early, I decided to get up and work on the sweater and get it finished. And I did. However, when I tried it on, the sleeves were too short so I ripped them back out to the point before decreasing for the cuffs and added a couple of inches. I’m not exactly sure what went wrong other than the fact that it’s hard to read the length correctly till you try it on with both sleeves. Of course, it could be that this is only my second sweater and I just don’t have the technique down yet.

Mr. FixIt lounged around this morning and didn’t get up till “brunch-time” so I fixed a big spread…sausage, eggs, fried potatoes, cooked apples, and homemade biscuits. I used Tipper’s recipe again and I’m telling you…I am SOLD. Seriously the best biscuits ever. I stored the leftovers in a plastic food container, then before bed last night, I warmed two of them up in the microwave for twenty seconds, spread a nice portion of real butter on top and a dollop of my homemade plum jam.

Other than those two things…I didn’t get a thing accomplished yesterday. Mr. FixIt went out after it cooled down to wash and wax the Lincoln. We live on a gravel road and the dust is terrible. Then you get a sprinkling of rain and you can imagine what it looks like. We watch a lot of reruns of Law & Order and last night we watched an episode of America’s Got Talent that we had recorded last week.

It actually felt pretty good to not have anything pressing to do. It’s supposed to be in the 90’s today and tomorrow, so there may be a whole lot of nothing getting done around here the next couple of days, as well. And that’s ok. One doesn’t have to be totally productive every single day. Accomplishing self-care is still an accomplishment.

    1. Sure! Here you go. 2c. Self-Rising Flour, 1c. Heavy Cream. Mix together with a fork. Scoop onto floured surface and fold a couple times. Pat out to about 1/2” thick and cut. Place on greased cast iron griddle or skillet and bake in preheated 450° oven for 12 minutes. ?
