“Ohhhh….the food of the ‘70s. We thought it was SO elegant and sophisticated!”

Look at these foods of the ‘70s! OMGosh! Someone posted a bunch of these on my Facebook feed last week and I had to laugh. These are the kind of things my first mother-in-law would have called “tres elegante”. El-e-GAN-tay…four syllables. What is that banana thing with ham and some sort of sauce on it? Or the hot dog volcano? Or that clear gelatin mold with the canned vegetables lurking in it???  I wonder if years from now, people will look back at our meals of today and think “Ugh!”?

We held our belated Thanksgiving Dinner yesterday. Cooking for a crowd is a multiple day affair and this year, everything came out perfectly. I cannot make stuffing to save my life, but this year it was moist and tasty. The brined turkey was succulent and flavorful. The roasted butternut squash was a surprising hit. We narrowly averted another fiasco with the sweet potatoes again this year. Last year, we forgot and left them in the oven. This year, I was going to cook them in the CrockPot. I had them out in the garage fridge and when Mr. FixIt brought all the food in this morning, they were inadvertently forgotten. Fortunately, I remembered in time to transfer them into a baking pan and popped them in the oven. They were perfect. The mashed potatoes were great and the gravy was the best! You just cant ruin green beans unless you burn them so they were fine. I wasn’t as impressed with the way I prepared the Brussels sprouts this year. I made a warm bacon dressing and tossed the chiffonade with crispy bacon bits, dried cranberries and the sweet and sour sauce till they were barely wilted. I think I should have cooked them another minute. The only thing we forgot to put out on the table this year was the cranberry sauce. It was left in the fridge. Have any of you frozen the sauce to use later? I hate to waste it.

There was a pall over the festivities, though. There was a death in our daughter-in-law’s family and they could not attend. They are all in our prayers. After dinner, we sat with the rest of the kids and talked about how quickly death can come. We cautioned the young ones to drive safely. They think they are bulletproof. Perhaps something like this coming so close to home will help them remember to drive carefully. I just cover them with prayer all the time.

And just like that…it’s December.
