Sure! One cup peanut butter (I use Extra Chunky), 1 cup white sugar and one egg. Mix well, form in small balls and roll in more sugar. Place on a parchment lined cookie sheet, flatten with fork in a crisscross pattern and bake in a preheated 350° oven for 6-8 minutes. Less cool a bit before removing to a cooling rack. So quick and easy!
