Day 85: It’s HOT in Here!

Land’s sakes…it was so hot yesterday, you could have fried an egg on the sidewalk. We had a couple of appointments in town with an hour and a half in between, so we rand a few errands. I was out pumping gas at Sam’s and carried the trash around the end of the truck to the can nearby. I had to walk out of the shade into the sun and it was searingly hot. Not only that, with our humidity level, the heat index was around 100℉. Brutal.

When we got home around 3:30, I realized we left the house AC off and it took forever to catch up and cool it off. Then, of course, I had to cook supper. When I stopped in Kroger on Monday to pick up a couple things, the first thing I saw was green tomatoes. I totally missed the whole fried green tomato thing last year because I was gone so much. I picked up two and headed to the seafood department. I chose a good sized swordfish steak. I don’t eat swordfish that much because I prefer it fresh and you can seldom find it here. I noticed a tray with garlic, sliced citrus, pats of butter, and sprigs of herbs. I asked the clerk if that was available to add to the fish you buy. He said he could put anything on it I wanted and he would pop it in a microwave bag with instructions on the bottom. OMGosh! How easy is that? I had him add lemon pepper, lemon slices, two pats of butter, and a sprig of rosemary. 

When it was time for supper last night, my kitchen was already hot so I couldn’t stand the thought of heating it up any more. I mixed up a simple beer batter (1/2 beer, 1/2 all purpose flour), whisked it till smooth, coated each slice of green tomato on both sides then dredged them in stone ground corn meal. I fried them in my Griswold iron skillet that I bought at a steam engine show a couple of years ago. The fish was done in four minutes in the microwave and it was perfect. The fried green tomatoes were the best I’ve ever made. I didn’t add salt to the batter and they really needed salt at the table, but other than that, they were perfect.

I am excited that we don’t have to go anywhere today. It seems like there’s something every single day that takes us here and there. I didn’t think after the lockdown that I would miss staying at home, but I do. In the same breath, I miss getting out in my camper and traveling around the country. I miss my Colorado family. We missed our spring beach trip this year. But, we are doing what we need to do right now. It won’t last forever and I can’t think of anyone I’d rather be doing life with than this guy.
