Day 46: It’s Feel Good Friday & I’m Gettin’ Back to my Roots

It’s May Day! Can you believe that??? In what seems like three lifetimes ago, I was a bit of a hippie earth mama. I had all the Mother Earth News Magazines and the Moosewood Cookbook. I made all of our bread, yoghurt, tofu, pasta, granola, and Grape Nuts. I grew veggies on any piece of land available. And I frequented the Farmer’s Markets to preserve as much food as possible. I was a girl on a budget. I did all this while working full time, raising a child, and putting my hubby through medical school. What can I say…I was young and could do anything.

I can still do all those homestead crafts, but once my second child came along and Hubby #2 was established in his medical practice, it was just easier to buy stuff than make it. Times have changed and I’m living this country farm life. And with the changes in the economy, I am picking those skills back up and dusting them off. I buy a couple cases of canning jars every time I go to the store. And I’ve slowly picked up some necessary pieces of equipment that I’ll be needing like tofu making supplies and the like. I’ll show you how I do that once I get everything in place.

I came home from the farm yesterday. As I was pulling out of the driveway, I had to stop and take a picture of the dogwood. The hills look like they’re draped with white lace. The flowering dogwood are so delicate and airy and they don’t last very long. You can see in this photo that some of the trees are beginning to leaf out but the dogwood stand alone with their flat four petaled posies.

I stopped at the store on the way home to pick up some Chobani plain Greek yoghurt. I’ll need about a half cup to use as starter so I can make my own. I was going to buy some whole wheat flour, then remembered I had some that had been stone ground at the mill up at Beaver Creek State Park in Lebanon, Ohio. When I got home and got everything put away, I decided to make a batch of homemade Grape Nuts.

The Amish make everything from scratch and somewhere along the line, I learned how to make this tasty crunchy cereal from an old Amish recipe. Once you’re done, store the cereal in an airtight container. It should last a while since it doesn’t have oil or eggs, but it’s so good, you won’t have it around for long.

The “cake” has been through the food processor and ready to toast and dry in the oven.

I’ve been trying to cut down on sugary treats but I love having a little ice cream in the evening. Last night, I put a couple heaping tablespoons of the plain Greek yoghurt in a bowl, drizzled some buckwheat honey over it and sprinkled a couple handfuls of the cereal on top. Oh, my gosh…it was amazing! Buckwheat honey has an entirely different taste than orange blossom or wildflower. It’s a dark brown and reminds me of molasses with its strong, bold flavor.

Preheat oven to 350℉.

  • 3 1/2 cups Whole Wheat Flour
  • 1 cup Brown Sugar
  • 1 tsp. Salt
  • 1 tsp. Baking Soda
  • 1 tsp. Ground Cinnamon

Mix dry ingredients together.

  • 2 cups Buttermilk
  • 2 tsp. Vanilla Extract

Mix wet ingredients together and add to dry ingredients. Stir to make a batter similar to pancake batter.

Line a large baking sheet with parchment or waxed paper. Pour batter onto the paper and spread evenly with a spatula. Bake at 350℉ for 20-25 minutes. Cool in pan for 10 minutes then remove to finish cooling on wire racks. 

Break half of the “cake” into chunks and pulse in a food processor till you get the consistency of Grape Nuts. Line the baking sheet with another piece of parchment or waxed paper and spread the crumbs around into an even layer. Place in a 275℉ oven. Take them out every 10-15 minutes to stir them around. It will take about 45 minutes to toast them till they’re dry if you live in a humid area like WV. Let them cool and place in a large bowl. Repeat with the other half of the “cake”. Once the other half is finished and cooled, place the entire batch into an airtight container to store in your pantry. Serve as a topping for yoghurt or ice cream. Use as a crunchy sweet addition to a salad. Or eat as cereal just like the Grape Nuts in the box. This tastes SO much better than the store bought variety!

So, there’s my Feel Good Friday suggestion…bake up some homemade Grape Nuts! Easy peasy and it feels good to make something wholesome like the hippie mama I used to be!
