Day 108: Chronicles of a Country Wife

After staying up late to bake two loaves of sourdough bread on Thursday night, I mixed up a batch of dough for English Muffins. I love this recipe because you put it in the fridge overnight and bake them the next morning. And, it makes three dozen smaller muffins or two-and-a-half dozen regular sized ones. I used my electric skillet this time. I had more control over the temperature. And, I could cook a dozen at a time. You cook them on one side for about seven minutes, turn them over, pop the lid on, and cook another seven minutes. Then I put them back on the baking sheet and put them in a 350 degree oven for about nine minutes. They were perfect, and…I can freeze them and have fresh English Muffins for the next three weeks!

Once the muffins were finished and the kitchen cleaned, I was pretty much finished for the day. The internet is giving us fits and the guy came out to fix it. It worked for two hours then was off again. That’s one of the frustrating things about living out in the country…modern conveniences aren’t as quick and easy to come by. He’ll come back soon and hopefully figure things out.

I noticed on my rounds through the garden that something was into my squash. I looked around and very nearly stepped on a good sized box turtle. I explained to the little critter there wasn’t room for the both of us in my veggie patch and he had to move back down to the creek. I carried him to the end of the far field and set him loose in the underbrush with lots of vegetation and water accessibility. He doesn’t need my squash and tomatoes as much as I do.

I harvested the first zucchini from the garden and made Zucchini Fritters with it. Mix up a batter with half cultured buttermilk and half all purpose flour. Salt and pepper to taste. Mix with a fork till well blended but little lumps are ok. Dip each slice one at a time in the batter and slip into a pan with hot oil. Cook till golden on each side and drain on paper towels. I served them alongside pork chops and it was fabulous!

  1. Thank you for the English Muffin recipe! Maybe I’ll try to tackle it one of these days. It looks a little complicated. I love cinnamon-raisin English Muffins w/honey for breakfast with a side of scrambled eggs.

    1. Actually, aside from keeping a sourdough starter going, it’s pretty easy! Especially using my great big electric skillet. I could cook a dozen at a time. ❤️
