Mr. Virgo was a trained Chef but preferred the managerial side of restaurants. He owned his own restaurants, he ran others. When he died, he was running the restaurant at The Ritz Carlton in Aspen. That’s about as prestigious an address you can get in the food and beverage industry.
Dining out with Mr. Virgo was a challenge. He was as quick to point out flaws as he was to offer praise. He ruined my ability to enjoying dining out for years.

I love my birthday and I celebrate my birthday month! While Monday is the actual day, my cousins and I celebrated my birthday last night with dinner in Bristol at a wonderful restaurant called Basq. I had the most delicious wahoo (fish) dish. I even threw caution to the wind and had dessert! I was fortunate to visit with Chef Travis after the meal and sing his praises. After boating all afternoon, dining out in the evening then walking around an antique car show, I was pretty whupped. And today we’re going fishing! I’ll get pictures!
