Baby, It’s Cold Outside!

I think Mother Nature has other ideas for me than traveling through the Blue Ridge Mountains through an Arctic cold front. Last week, I had every intention to knock out the arm-long list of things that needed my attention and be back on the road by this time. Then, I got home. And got a real look at what needs done around here. The temps have gotten increasingly colder day by day with next week looking even worse. To top that off…there’s the new kitten. We can’t just up and leave now. It’s going to take more planning than it has in the past. That’s not to say we won’t be going anywhere, but honestly…I do not want to be off somewhere and not be able to get back because of bad weather. 

In the meantime, we’ve been hustling around the farm and the Ponderosa battening down the hatches before the coldest weather of the year arrives. The top of the agenda was the pool. We really needed to get the level down and unhook the pump before last night as the low this morning was predicted to be 22°. Mr. FixIt worked all day Thursday in the cold rain and got that  finished. Now we just need to get the cover over it and it’s put to bed for the winter. I emptied the food from the r-pod and turned off the refrigerator yesterday in preparation for the coming cold snap.

Cold weather is perfect for a big pot of homemade soup. When I was at the store Thursday, asparagus was on sale for $.99 a pound. I bought two pounds and made a pot of Cream of Asparagus soup. I’ve never made it before and it was divine! I made enough for four big bowls for under $4.00! Here’s the recipe should you wish to try it.

Cream of Asparagus Soup

2 lbs. fresh asparagus, washed, trimmed, and chopped in 1” pieces

1 large onion, chopped

4 tbsp. unsalted butter

4 cups chicken broth

1 cup heavy cream

Salt and pepper to taste

1/4 tsp. Lemon juice

Melt butter in soup pot and add onion and chopped asparagus. Stir over medium heat till onion  begins to become transparent. Add chicken broth. Cover and simmer over low heat till asparagus is very soft. Remove from heat and purée using a blender, food processor, or hand held blending wand. Return to heat, add cream, and bring just to a boil. Add lemon juice and salt and pepper to taste and serve hot or cold.

It was delicious and so quick and easy to make. Mr. FixIt said he had never had Cream of Asparagus soup before and he loved it!

Today’s culinary circus will include a Sour Cream Apple Pie and Homemade Ooey Gooey Macaroni and Cheese! These are the days I love…the days I’ve worked so hard for this year. What’s cooking in YOUR kitchen today?
