A Day at the Keyboard

With the first day of NaNoWriMo under my belt, I came out with 11,550 edited and proofed words. That doesn’t mean that’s the final draft… it’s just the beginning of my working draft. But it’s a good beginning! It took me over an hour to just FIND the manuscript. It’s been so long since I’ve worked on it that I couldn’t even remember the working title I was using. I finally found a copy as an attachment to an email. I tried every which way to open it and nothing worked. I broke for a second cup of RYZE and remembered… I wrote all that on my iPad. When I searched it, there it was. 

I’ve decided to move it all to my laptop. For no other reason than it is new and more reliable. It’s painful to write thousands of words and then lose them in the ether. I learned that the hard way a long time ago. “Save early. Save often.” My mantra. I saved the iPad file into a Word document and emailed it to myself. Voila! 

I haven’t worked on my book since probably 2018. Fortunately, the last time I worked on it, I did some heavy editing but I hadn’t accepted the additions or the deletions. I spent the rest of the day working on that and some formatting issues. I think spending time away from the work is critical. It allowed me to read it from a fresh perspective and I am happy with today’s results.

I need to take breaks away from the screen throughout the day. I have dry eye so I need to use eye drops several times a day. It’s really easy for me to get swept up in what I’m writing and forget to do that. If I don’t, I pay for it with blurry vision and twitchy eyes. Unfortunately, I didn’t do a great job with that task yesterday so I must do better today.

I tried something new yesterday. I seldom succumb to the lure of a flashy Facebook ad because I was burned by a couple of things I tried a few years ago. I’m much more discerning these days. I’ve been very happy with Noom, the weight loss app, and RYZE, the mushroom coffee and I hooked up with them through Facebook. So I was intrigued when I recently saw an ad for Popcorn Pancakes. 

I LOVE PANCAKES! But most pancake mixes lack flavor and they’re sorely lacking in nutritional value. All hat… no cattle, so to speak.

The creators of Long Table Pancakes were featured on Shark Tank. This guy knows what he’s doing. The whole thing started when he wanted to impress a certain beautiful acrobat. She needed some pretty nutrient-dense food to fuel her long and grueling workouts. Entrepreneur Samuel McClure Taylor to the rescue. Samuel was a former actor. He wanted to make a light pancake that was nutrient-dense for the woman he was smitten over. Most whole-grain pancakes are dense and heavy. He wanted that lighter-than-air pancake that was bursting with great flavor AND wholesome nutrients.

Hence… this pancake mix was developed through much trial and error. The wheat we eat today is what I call “Frankenfood”. It’s been genetically engineered to produce fast crops with high yields for less investment. Samuel went to the farmers who grow heirloom grains. These are the grains our great great great great grandparents ate and the seeds have been passed from generation to generation. Samuel tried popping popcorn from heirloom kernels and grinding it into “flour”. With the addition of other heirloom grains like organic wheat flour, organic oat bran flour, and almond meal… these showstoppers had the folks on Shark Tank swooning. It does have some cane sugar, but real quality cane sugar has such a pure sweetness, it doesn’t take much to delight your tastebuds. 

I can tell you from personal experience…I have NEVER tasted a pancake like this! It was truly flavorful. I mean packed-with-a-punch flavor that made me want to take tiny little bites to make breakfast last a while. Long Table Pancake Mix is only available in a handful of boutique stores. But they have a booming business online. As with all things that are really good for you, it’s a little pricey, but for a special breakfast treat… I think it can’t be beat!

With all that, Samuel didn’t get an offer from The Sharks, but that didn’t stop him. His company continues to contribute to sustainable agriculture practices by teaming up with actual farmers developing nutritious products that will not only.
